Easy Xmas Recipes


Xmas Cookies

1 cup shortening
3 1/2 cups all-purpose flour
1 teaspoon baking soda
2 large eggs
1 teaspoon salt
1/2 cup buttermilk
1 1/2 cups pecans
2 cups cherries, chopped
2 cups dates
2 cups brown sugar, firmly packed


Mix shortening, brown sugar and eggs; add salt, soda, buttermilk and flour.
Stir in cherries, dates and pecans into batter.
Chill 1 hour in refrigerator.
Drop on cookie sheet by teaspoonfuls.
Bake at 375° for 8-10 minutes.



Xmas Creams

1/3 cup milk
1 cup crunchy peanut butter
2 cups sugar
1 (7 1/2 oz) jar marshmallow creme

Combine peanut butter and marshmallow creme in large bowl.
Cook sugar and milk to a soft ball stage (238 F).
Remove from heat and pour over peanut butter and creme.
Beat vigorously until smooth.
Pour into a greased 8-inch square pan.
Cut in squares when firm.



Xmas Meatballs

2 lbs lean ground beef
2 tablespoons brown sugar
2 eggs
1/4 cup water
1 cup breadcrumbs
1/4 cup minced onions
2 (8 ounce) cans jellied cranberry sauce
1 tablespoon lemon juice
1 1/2 cups chili sauce

Preheat oven to 350 degrees F (175 C).
In a large bowl mix together the ground beef, egg, water, bread crumbs, and minced onion.
Roll into small meatballs.
Bake in oven for 20-25 minutes turning once.
In slow cooker (or large sauce pan) over low heat blend the cranberry sauce, chili sauce, brown sugar and lemon juice.
Add meatballs, and simmer for 1 hour before serving.



Xmas Fruit Bars

14 oz. can sweetened condensed milk (Eagle brand)
6 Tb. Land O Lakes Butter
3/4 c. chopped pitted dates
1/2 C. (Old Grandad brand) Bourbon
3/4 C. red candied cherries, halved
3/4 C. green candied cherries, halved
1 C. whole pecans
4 C. Crushed vanilla wafer crumbs
1/2 C. candied pineapple, chopped

Put butter in jelly roll pan in a preheating 350 degree oven to melt butter while you crush the vanilla wafers. Take pan from oven and scatter crumbs over the butter. On top of crumbs arrange the candied fruit and pecans. Mix together sweetened condensed milk and bourbon; slowly pour over the entire top. Bake at 350 degrees for 20-25 minutes until top is brown. Cool thoroughly and cut into squares. Best if served the next day.



Xmas Cherry Cake


1 cup sugar
1 teaspoon vanilla
4 eggs
1/2 teaspoon salt
1 lb dates, pitted
1 cup flour
1 teaspoon baking powder
1 lb pecans, chopped
1/2 lb cherries, candied
2 slices candied pineapple
1/2 lb coconut

Mix sugar, eggs, flour, baking powder, salt and vanilla.
Put cherries, dates and pineapple through food grinder on coarse. Add ground fruit to sugar mixture; also add pecans and coconut. You will have to use your hands to mix.
Grease and flour angel food cake pan.
Place mixture evenly in bottom and cover with waxed paper, then brown paper. Tie with string to close.
Bake at 350 degrees for one hour.
When cool, pour sherry over and sit until Christmas.



Xmas Strawberries


2 (6 ounce) packages strawberry gelatin
2 ounces slivered almonds
2 teaspoons vanilla extract
1/2 cup red decorator sugar
1 (14 ounce) can sweetened condensed milk
2 cups flaked coconut
1/4 cup green decorator sugar

Blend together the gelatin and condensed milk.
Add coconut and vanilla; mix well and refrigerate until chilled.
Roll into small balls and shape into strawberries; roll in red sugar crystals.
Dip fat end into green sugar crystals.
Place an almond sliver into the fat end for a stem.
To prevent hardening, store in an air tight container until ready to serve.



Xmas Bananas

6 fresh bananas, sliced in coins
2 cups pineapple juice
1/2 cup grenadine
4 1/2 fluid ounces vodka, 3 shots (more or less depending on how you like to party!)

Layout bananas in presentation dish.
Mix liquid ingredients. Pour over bananas.
Marinate overnight in refrigerator.



Xmas Crunchies

1/2 cup brown sugar
1/2 cup walnuts, chopped
1/2 cup granulated sugar
1 egg
1/4 teaspoon baking powder
1 cup oatmeal (dry)
1 cup flour
1/2 teaspoon baking soda
1/2 cup coconut
1/2 teaspoon vanilla
1/4 teaspoon salt
1 cup corn flakes
1/2 cup butter

Preheat oven to 350 degrees.
Cream butter and sugars together.
Beat egg and vanilla, add to creamed mixture.
Sift flour, soda, salt and baking powder together.
Add dry ingredients to wet, and stir to blend.
Add remaining ingredients and combine.
Roll dough into 1 inch balls and place on greased cookie sheet, 2 inches apart.
Bake 10-15 minutes, until browned.



Xmas Coffee


1/2 cup non-dairy powdered coffee creamer
1 cup mini chocolate chips
2 tablespoons vanilla powder
1/4 cup powdered sugar, sifted
2 cups nonfat dry milk powder
2/3 cup instant coffee crystals

Combine non dairy creamer, powdered sugar,powdered vanilla, and milk powder.
Layer with coffee crystals and chips into two cup jars.
Tap between layers to settle before adding next layer.
To use: Mix all ingredients to combine. Use 2-3 teaspoons of mix per 2/3 cup boiling water.



Xmas Chicken

1 (2 1/2 kg) chicken
6-8 sausages (chipolatas, these are frankfurter length sausages)
8 slices streaky bacon
prepared stuffing

Dry chicken inside and out.
Half fill chicken with stuffing, place chipolatas inside chicken, they will stick out the end.
Place in roasting pan and drape to cover with streaky bacon.
Bake at 160 C for 3-4 hours, checking regularly after 3 hours.
Serve with your favourite roast veges.



Merry Xmas Cookies

1 cup margarine
1 teaspoon baking soda
1 teaspoon cinnamon
6 slices crystallized pineapple (2 red, 2 green 2, yellow)
2 cups dates, chopped
3 eggs, well beaten
3 cups plain flour
7 cups pecans
3/4 lb white seedless raisins
2 cups cherries (1 red, 1 green)
1/2 cup milk
1 cup brown sugar

Cream butter and sugar.
Add eggs, flour, soda and cinnamon.
Add milk then fruit mixture and nuts.
Drop tea- spoonful on greased cookie sheet. Bake 5 minutes at 300 degrees.
Makes more than a hundred.



Xmas Snow Punch

1 (46 ounce) can Hi-C Hula Punch, thoroughly chilled
2 pints vanilla ice cream, softened
2 cups Sprite, chilled

In punch bowl, combine Hi-C Hula Punch, Sprite and ice cream.
Stir until well blended and chill.

Christmas Eve Punch


1 (32 ounce) bottle cranberry juice
2/3 cup lemon juice
1/2 cup sugar
2 cups orange juice
2 teaspoons almond extract
1 (42 ounce) can unsweetened pineapple juice
1 (33 7/8 ounce) bottle ginger ale, chilled

Combine first 6 ingredients; chill.
To serve, add ginger ale, stirring well.



Cranberry Xmas Punch


3 cups cold water
1 cup boiling water
1 (6 ounce) can frozen lemonade concentrate
1 quart ginger ale, chilled
1 (3 ounce) package cherry gelatin
1 quart cranberry juice cocktail, chilled

Dissolve the gelatin in boiling water.
Stir in the lemonade.
Add the cold water and cranberry juice.
Place 2 ice cube trays in largte punch bowl.
Pour punch on top over the ice.
Pour chilled ginger ale inches.
